Measurements [American]

  • 225 g powdered sugar, sifted
  • 225 g cream cheese full fat
  • 110 g butter 1 stick
  • 1/2 tsp vanilla extract

Sift the powdered sugar into a large bowl.

On high speed, cream the cream cheese and butter together until light and fluffy. Beat in the vanilla.

On low speed, mix in the powdered sugar one large spoonful at a time. Do this patiently so the sugar doesn't fly everywhere.

When all of the sugar is incorporated, beat on high speed until smooth and fluffy. If it's a warm day, chill before using.

A soft, not-so-sweet icing that works well with any spice cakes.
