Jom Collins

Perhaps you are a non-drinker, unlike your Tom Collins-happy friends, or you yourself are besotted with this refreshing drink, and your children keep asking to taste the sparkly lemonade in your glass. Fear not, friend! Here is a non-drinker friendly version!

In the bottom of a cocktail shaker, muddle a few leaves of mint or basil. Mint is a safe choice for children, as it's a flavor they are familiar with. For adults, basil or Thai basil are what's in my garden.

Add ice, 1 ounce lemon juice and 2 ounces simple syrup (adjust ratio to more lemon, less sugar for adults) or 3 ounces lemonade concentrate, and shake. Strain into a Collins glass with ice and top with club soda.
