Perhaps you, like our dear friend Simon, don't particularly like gin, but have friends who press Tom Collins cocktails on you as if they had just discovered Ayn Rand or Bernie Sanders. Fortunately for you, these friends have acquired a bottle of your home-made limoncello (store-bought also works), and are more than willing to find a less gin-heavy version.

• 1 oz Hendrick's gin
• 1 oz limoncello
• club soda

Shake gin and limoncello with ice. Pour over ice into a tall Collins glass, and top with club soda.

Optionally, muddle a few leaves of basil or mint in the bottom of the shaker before mixing.
